I myself usually do not add anything.
But, generally speaking, pepper goes well with shoyu tasted-ramen and chili
pepper with miso taste. And tonkotsu soup is good with crashed garlic.
Adding neither salt nor shoyu is popluar in Japan. Neither seasonings are
prepared on the table. When you feel the soup is short of taste(saltiness),
it is recommended that you should ask adding more "Tare" (sauce).
Anyway, you are free to add seasonings, but you'd better take several sips
without them to check the original taste! |
