Yatai
The most primitive style of ramen shop is a mobile ramen stall called "Yatai" in Japanese. Amazingly, it is equipped with necessary appliances for cooking ramen such as a gas oven, deep pans, and washing tools.
As you can see in the photos(above), a conventional yatai is wooden-made, wheeled, then mobile. Pulled by manpower, the conventional yatais are wandering playing the melody known as charumera looking for consumers.
Yatai is not necessarily designed for ramen. Before the advent of ramen yatai, soba yatai or sushi yatai used be more popular. Especially soba yatai were called "Yonaki-soba" (literally translated "humming soba in the night") because they were playing the flute as well. But it took place by ramen yatai after World War II.
The city of Fukuoka is still famous for its variety of yatais offering from a glass of cocktail to series of tempura, and many kinds of dishes.
In these days, it is rare to find conventional man-powered yatais in Tokyo. Now, they are being taking place of by trucks reformed for cooking ramen. Some of them are wandering selling ramen, though majority is stationed in front of bustling train stations.
