The gentleman posed in the chef jacket is Tocchan, who have provided us
with noodle recipes. While staying in Detroit, USA, Tocchan started cooking ramen from scratch because he finally found out there was no other way to bluff his way to a satisfying bowl of ramen. Since then, Ramen cooking has become his hobby. Also taking a liking for entertaining others with his ramen, he has begun to dreamt of opening his own ramen shop someday. Accrding to himself, he was not necessary a big fan of ramen before he went to US. In that sense, his ramen can be said "fostered in USA." Tocchan has been continuing his trail and error after returning to Japan. They visited Tokyo, December 2001 with hope to find clues for setting up
ramen shop of their own brand in Singapore. BON took them to Yashima because its chef is from Mainland China and fluent in Chinese so that team members could learn about a ramen shop from her.
