Ajisen is a Ramen specialty shop newly opened in 2001, in NY, USA., whose
headquarter locates in Kumamoto. They serve Tonkotsu ramen with extensive
garnishment line-ups. In addition, Yakisoba and Hiyashi-Chuka are in their
menu, too. Ajisen is a large ramen shop chain in Japan, selling ramen pack
on the net.
Noodles are fine and straight, probably imported from Japan. Fairly cooking let them remain adequately chewy. However the soup was too light for me who expected heavy, full-bodied & fatty Tonkotsu soup. You can say bland, no persistent after taste. (FYI , fatty soup is also available upon request.) Chashu was tasty.
